Instructions
Cook time: 25 minutes
Preheat oven to 400°F; mix potatoes with 1 tbsp oil, salt/pep + fave spices (we like garlic powder), then spread on a sheet pan; roast 20-25 min until tender
Meanwhile, heat 1 tbsp oil in skillet over med-high; pat scallops dry, add to pan + season with salt/pep; sear undisturbed 2 min, then flip over + sear 2-3 min more until firm, opaque + cooked through; turn heat to low + mix in ½ cup sauce to warm, 1-2 min; set aside
Heat 1 tbsp oil in large skillet over med-high + sauté half the spinach + salt/pep 1-2 min until wilted; add remaining spinach + cook another 1-2 min until all spinach is wilted
Add all to plates + enjoy!
