Instructions
Cook time: 7 minutes
Boil large pot of salted water, add 1 cup couscous + stir; cook 5 min, then drain + add to a large bowl; drizzle on 1 tsp oil + set aside to cool slightly
Meanwhile, chop any large pieces of veggie mix
Add veggie mix + chickpea salad to couscous, then toss to combine
Divide between 2 plates + sprinkle on 2-4 tbsp cheese per plate—enjoy!
