Instructions
Cook time: 10 minutes
Heat 1 tbsp oil in skillet over med-high, slice tofu nuggets in half + heat 1-2 min until warm + browned; remove from skillet + set aside
Heat 1 tbsp oil in same skillet over med-high; sauté stir-fry veggies + salt/pep 2 min then add 2 tbsp water, cover + cook 2-3 more min until tender
Add tofu to veggies + mix thoroughly; divide between bowls—enjoy!
