Instructions
Cook time: 15 minutes
In a small pot, bring ½ cup plus 2 tbsp of water to boil, add a pinch of salt, 2 tsp of oil + stir in ½ cup of couscous; turn off heat, cover + let stand 5 min; fluff with fork
Heat 1 tbsp oil in skillet over med-high; add half the bag of broccoli, salt/pep + sauté 4-5 min until lightly browned; add 2 tbsp water, reduce heat, cover + steam 3-5 min more until tender
Pat fish dry, season with salt/pep + fav spices; heat 1 tbsp oil in skillet over med-high (get that pan hot, otherwise the fish will stick) + sear fish 3 min; flip + sear another 1-2 min (for well done cook 3 min on second side)
Divide ingredients to 2 bowls + squeeze of lemon
