Instructions
Cook time: 12 minutes
Preheat oven to 400°; slice ½ of lemon into rounds + break up rice into small pieces
Place 2 large pieces of foil on a sheet pan + oil the foil; divide rice + asparagus onto each, top with shrimp + layer with lemon slices; drizzle each foil with 1 tbsp water, 1 tbsp oil + salt/pep; bring the long edges of foil together + roll to seal, leaving 1-inch of space above ingredients; repeat with side ends of foil— your pack is sealed!
Bake 10-12 min until shrimp is opaque + cooked through
Divide to plates + open foil packets (watch out for steam!)
