Cook time: 10 minutes
Heat 1 tbsp oil in a skillet over med-high; break chicken into bite-size pieces, add to pan + season with salt/pep + fave spices (we like garlic powder); sauté 2-3 min until hot
Spread about ¼-½ cup chicken evenly over one half of one tortilla, leaving a ½-inch border around edges; top with 2 tbsp cheese; repeat with one more tortilla
Fold tortillas in half, forming half moon shapes
Heat a lightly oiled, clean skillet over med-high; working in batches if needed, add tortillas to skillet + cook 1-2 min per side until toasty; serve with 2-3 tbsp salsa per quesadilla—looks good!
