Cook time: 17 minutes
Wipe mushrooms clean + thinly slice; heat 1 tbsp oil in skillet over high, add mushrooms + cook undisturbed 3 min; sauté 3-4 min more until browned + tender, season with salt/pep + set aside
Peel + dice shallot, add to skillet on med heat with 1 tbsp oil, cook 2-3 min; add half the spinach with salt/pep + cook 1-2 min until wilted; add remaining spinach + cook 1-2 min more until all spinach is wilted
Heat a skillet over med-high heat, pour chicken + juice into pan, break up chicken with wooden spoon, heat 2 min, flip + cook 2-3 more until warmed + browned
Divide spinach between bowls, top with mushrooms then chicken—delish!
