Instructions
Cook time: 14 minutes
Preheat oven or air fryer to 375°; add veggie balls to a sheet pan or air fryer basket; bake 10 min or air fry for 4-5 min until heated through, shaking halfway
In a small pot, boil ¾ cup plus 1 tbsp of water; add a pinch of salt, 2 tsp of oil + stir in ½ of couscous; turn off heat, cover + let stand 5 min; fluff with fork
Meanwhile, heat 1 tbsp oil in skillet over med-high + cook veggie mix with salt/pep 3-5 min until tender; set aside
Divide all between bowls then dollop each with 2 tbsp tzatziki—enjoy!
